To my Chicago friends– I hope you will be able to come out to my very first show at Davenport’s Piano Bar & Cabaret this Wednesday evening at 8 PM. It will be a fusion concert of opera, pop, musical theater, original tunes, and the introduction of an electrifying new genre that will be debuted at the show! The Food: So far, I have tried the Chocolate Nut Krunch and a homemade creation made with the Keen One Quinoa original-flavored organic quinoa packet.

The Backstory: I was recently approached by “Captain” Christopher Algea of Keen One Quinoa. Beauty pageant queen campaigns for vegan Thanksgiving dinners

Marisa Buchheit is fighting for change this Thanksgiving, one tofurkey at a time.
As Miss Chicago 2012, Buchheit, a vegan, is using her position to encourage people to try a meat-free Thanksgiving, or to incorporate a vegan dish into their holiday spread. The 22-year-old knows asking people to forgo the traditional bird and stuffing won’t be easy, but she’s still optimistic.
“I’ve noticed some resentment to discussing this kind of vegan movement, but I think now is also a really good time to bring it up,” Buchheit said. “People are conscious about what things are served at the table.”
To help open people to the idea, Buchheit, of Chicago’s Edison Park neighborhood, tells them her own story.
Buchheit became a vegetarian at age 8 after learning about animal abuse and suffering in farms and factories. Four years later she made the switch to veganism, partly influenced by her older cousin, also a vegan.
Shortly after, she dropped 30 pounds within six months and enrolled in singing lessons. She’s now a soprano hoping to pursue a career in opera.
Buchheit, who started competing in pageants five years ago to earn money for college, acknowledges she might have had a hard time turning vegan had her family not embraced the lifestyle.
For example, her father followed in her meat and dairy-free footsteps several years ago. And her mother, a meat-eater, loves to whip up vegan dishes in the kitchen.
The family has even hosted special Thanksgivings for the past four years, with an animal-friendly spread including tofurkey and sweet potatoes made with vegan ingredients. At first, some relatives gave funny looks, but no one has ever fought against it.
“We’re accustomed to it now. It’s really fun,” said Buchheit’s mother, Amorn.
Mentor and friend Karyn Calabrese, also a vegan, said advocating for veganism around the holidays is difficult because food-related occasions like Thanksgiving are ingrained in traditions.
So many people put importance on the details of the meal, rather than giving thanks for what’s going on in their lives, added Calabrese, who owns three vegan restaurants — Karyn’s Raw Bistro, Karyn’s Cooked and Karyn’s on Green — and a grocery store, Karyn’s Fresh Corner, in Chicago.
But that makes Buchheit’s advocacy work more important, fellow activists say. It’s unusual for a queen to reach out in support of the vegan lifestyle, they said.
“We’re really thrilled to see her using her platform to show people how easy it is to have a delicious cruelty-free Thanksgiving meal,” said Danielle Katz, a manager at PETA, which is working with Buchheit.
On a recent afternoon, Buchheit hosted a turkey-free Thanksgiving dinner with PETA at The Chicago Diner, a vegetarian eatery. On a nearby table sat fixings including veggie turkey roast, beefy Wellington made with seitan and a pumpkin chocolate cheesecake made with a vegan, nondairy cream cheese.
Decked in her silver crown and a white sash, the pageant winner walked around the room, noting that the ingredients in the menu items can be bought at most mainstream grocery stores. She sat and chatted with the restaurant staff about the recipes as she sampled their entrees.
“We (vegans) consider ourselves down-to-earth. But she comes in so refined and really takes us to that next level,” said Michael Hornick, general manger of the diner. “She makes it so that it’s not just one culture.”
Buchheit said that when her run as Miss Chicago is over, she plans to continue promoting veganism.
Then she grabbed a spoon and served herself pumpkin ravioli with butternut squash gravy.
“Vegans have fun with food too,” Buchheit said with a smile. “It’s not boring. It’s not eating lettuce and grass.”

Fashion of the Opera 2012, an event conceptualized, created, and hosted by Miss Chicago Marisa Buchheit, has been noted as “one of the most prestigious events of the season” -Jorge Zavala (Le Prestige du Monde) and an event that “impressed from start to finish” -Katie Cahnmann (NowYouKnow Events).
Marisa presented this event with her opera company American Chamber Opera (in collaboration with OperaModa), and the event benefited the Merit School of Music. Marisa Buchheit ran the Chicago Marathon on Sunday, October 7th. This was her first full marathon, and she completed the race in just under 4 hours!!! She was proud to represent her city as Miss Chicago and as one of the finishers of this year’s race.
